Peel an apple or pear, sprinkle with sugar and cinnamon, top with butter, wrap it in puff pastry and bake it in the oven—rabotte picarde is the easiest French dessert. Also spelled rabote (the old word for the ball used in real tennis); other names include bourdelot or douillon in apple-loving Normandy, boulaud in the Ardennes or talibur in Picardy.
