Ménagère is a household, and as all households are different, so sauce ménagère can mean a number of things. Sauce blanche de la ménagère or sauce bâtarde (a roux with water, egg yolks and lemon) is what one might prepare at home as a lighter version of hollandaise or mousseline to go with artichokes or fish.
A sauce ménagère also means a roux mixed with the stock of a dish, with the addition of herbs, and sometimes cornichons and crème fraîche.
