Stuffed vegetables, usually tomatoes, green or yellow peppers, zucchini, and sometimes onions are classics of Greek cooking. The stuffing is nearly always mix of rice, parsley, onion, garlic, tomato pulp, chopped zucchini, mint and dill, with generous lashings of olive oil. It's a good vegan/Lenten dish, but there's also a version with ground meat and cinnamon.
