Yellow goat's beard, or yellow salsify (Tragopogon) with edible shoots and leaves; the buds are pickled and eaten with drinks.
Other names include γένια του λαγού (yenia tou lagou, or hare's beard), λαγομούστακα (lagomoústaka, or hare's mustache), λαγονούρι (lagonoúri, or bunny) and γένια του τράγου (yénia tou trágou, or goat's beard)
