ftéri

φτέρη

Ferns. Fern shoots Βλαστάρια φτέρης (vlastária ftéris) are edible (they taste a bit like asparagus). In hard times people used to gather them and pickle them, make them into patties with potatoes, fry them in batter or serve them in salads (best to wash off the fuzzy bits first, though).

Menus often say βλαστοί τρυφερής φτέρης (vlastoí tryferís ftéris) or tender fern shoots.
