Cabbage rice, a classic dish of Thrace but made throughout Greece, especially during Lent because it's tasty, uses winter cabbage and is Nistisimo, although it's far too 'homey' to appear on many restaurant menus. It takes cooked

The classic version takes cooked rice, mixed with a sauce of onion. tomatoes and shredded cabbage, then baked. Pepper flakes might be added for pizzazz; others add carrots, or feta, or meat etc etc, and make into more a soupy risotto.
