λαχανόρυζο

Cabbage rice, a classic dish frin Thrace but made throughout Greece, especially during Lent because it's tasty, uses winter cabbage and is Nistisimo, although it's far too 'homey' to appear on many restaurant menus.

The classic version takes cooked rice, mixed with a sauce of onions, tomatoes and shredded cabbage, then baked. Pepper flakes might be added for pizzazz; others add carrots, or feta, or meat etc etc, and make into more like a soupy risotto.
