Pitaroudia, traditional Dodecanesse food

Considered the national dish of Rhodes: pitaroudia are chick pea fritters made with tomatoes and onions and mint. On other Dodecanese islands, such as Nissyros, pitaroudia are made with yellow split peas, and possibly oregano instead of mint.
