sformato

soufflé

Despite what you might read elsewhere, a sformato is usually not quite as light and airy as a soufflé. Of the hundreds of recipes from around Italy for sformati involving cheese, vegetables, mushrooms, potatoes or many other things, some come out looking more like a quiche. (Lately, chefs have been coming up with dessert versions). On a restaurant menu, a small one might be called a sformatino.
