Also spelled struccolo. A favourite in Friuli, where the classic filling is ricotta, raisins, lemon and breadcrumbs. Then there's the unusual strucolo cotto in straza (Kuhani Struklji), filled with chopped walnuts and raisins, or spinach, or ricotta, or frutti di bosco, and boiled.

There are also savoury versions, such as the strucolo istriano, filled with pork, chicken and sausage, rolled and tied up and boiled, then topped with melted butter and grated cheese. Strucolo salato uses a potato dough, filled with spinach or chard and other vegetables in a meat sauce.
