lingue di suocera

crispy flat bread or colourful pasta ribbons

'Mother-in-law's tongues' can be either a crispy flat bread, traditionally made around Asti and Alessandria in Piedmont, or one of the most beautiful of new pasta forms, long multicoloured ribbons made with carrots, spinach, tomatoes etc—a compliment, perhaps, to a colourful mother-in-law? Hardly...the name is derived from the sharp, serrated edges.
