A speciality of the Sabine hills, this pasta isn't rolled out, but rolled into long fat spaghetti and looped into a skein like a yarn; it's traditionally served with olive oil and garlic.

Also known as maccaruni a matassa ('skein macaroni') or maccheroni a fezze.
