pork and chickpea soup

Cisrà is a hearty soup made in Le Langhe, made with pork rinds or tripe, chickpeas, cabbage, potatoes leeks, and celery. It is especially attached to Dogliani, in the province of Cuneo where religious confraternities would serve it to visitors; on 2 November Dogliani still holds a traditional Fiera dei Santi e Cisrà.
