Accasciato

a rare cow's and buffalo's milk cheese

This is a rich, hard-to-find cheese made from the milk of buffalos and cows that graze on in a coastal marshes of Tuscany. It is either semi-soft and mild, similar to mozzarella but with a tang, or aged in a limestone cave, with streaks of mould.
