Old Emperor Nero ate them by the bushel (he thought they would improve his singing voice), but the humble leek doesn't really have a starring role in the Italian kitchen today. They appear often in savoury tarts and in vegetable pasta sauces, and as everywhere else, they are often teamed up with potatoes.
