Bomboloni means 'big bombs', but in Tuscany they are also lightly fried doughnuts; the Lazio version, bombolone Laziale are often filled with cream, custard, marmalade, chocolate (sometimes even hot chocolate) through a hole in the top. Also see Venetian frittelle.
