sbroscia

lake fish soup

A speciality of Central Italy's lakes, especially Bolsena, sbroscia is a soup made with lake water (at least according to tradition) fresh fish (tench, perch, smelt, eel, and pike), tomatoes, mint, potatoes and bread.

Another type from the region around Pisa, sbroscia della Vecchia Versilia, is made with pumpkin and beans.
