Cow's milk cheese

Bra cheese come from Cuneo, made from pasteurized or unpasteurized cow's milk, sometimes with the addition of goat's or sheep's milk. The soft version is aged for 40 days, while the hard version is aged for 6 months.

Bra is also the headquarters of the Slow Food Movement, which originated in Italy in 1986, originally as the Arcigola association. In 1989, as fast food in the form of McDonald's opened up by the Spanish Steps in the heart of Rome it changed its name and became the International Slow Food movement. It now has over 100,000 members in 150 countries.

Slow Food Cheese festival takes place in Bra (September in odd numbered years) attracting cheese makers and sellers from around the world.
