cow's milk cheese from Trentino

Produced since ancient times in Trentino's high pastures of Folgaria, Lavarone and Luserna, Vezzena was the favourite cheese of Emperor Franz Joseph. Both a table cheese and grated, it's traditionally used in the region's soups and canederli. You can also find Vezzena aged for up to two years, or stravecchio.
