lemon zest, chopped garlic and parsley

gremolata

Sometimes spelled gremolada or gremolà. It always has chopped parsley and grated lemon peel; it usually has a little chopped garlic, and different recipes may add mint, rosemary, capers or whatever you please, even anchovies.

The traditional accompaniment to a Milanese osso buco, it goes well with other meats and fish too. Not cooked, but added as a garnish.
