very thin omelettes

Stracci means 'dust rags' but they can also be torn up pieces of lasagne or thin omelettes fried with a bit of flour (also known as antrodocani) then filled, cannelloni-style, with meat, vegetables and cheese, layered in a pan with meat sauce and cheese and baked. Antrodoco, in Rieti province, holds a festival in their honour the first Sunday in August.
