In spite of the green-sounding name, verdure refers to all vegetables; similar to ortaggi.

Verdure in pastella are deep fried vegetables in batter—basically tempura, Italian style. They are a popular street food in Palermo.

verdure straginate in the Marche are mixed greens, preferably wild ones, sautéed with garlic in olive oil. When soft, smash in a boiled potato with a fork, then top with pepper flakes.
