Casatella Trevigiana

soft 'homemade' cow's milk cheese

Originally made by housewives in the province of Treviso (the name is derived from 'casa' rather than caseus, the Latin for cheese), Casatella is a fresh artisanal cheese now produced on small farms around Treviso, with local milk. The cheese is delicate, soft, practically rindless and creamy, and used in a wide variety of recipes.
