Tuada

'cellar' sheep's cheese from the Garfagnana

Gamey, artisanal sheep cheese with character, made on small farms in the Apennines. Tasty with cured meats and bread, or grated on pasta or stuffed in pasta. The cheeses are wrapped in cloths and aged in cellars called tuada—hence the name.
