‘Cart driver’s sauce’ a spicy tomato sauce for pasta alla carrettiera generally made with tuna and/or mushrooms. It was a popular dish in inns frequented by drivers of mule carts carrying barrels of wine for the Urbs from the surrounding Castelli Romani.
