'Blouse and trouser legs' is a speciality of the Maremma region: chunks of lamb shoulder browned in a mix of prosciutto fat, garlic, onion and carrot, with potatoes, tomatoes, olive oil and bread, sprinkled with pecorino; some add artichokes or mushrooms. Also known as zuppa d'agnello.
