A Neapolitan favourite from the back streets of the Quartiere Spagnuole, where many families slaved all day making shoes and didn't have time to cook anything fancy. Good tomatoes, pecorino, parmigiano, garlic and basil. Some like peperoncini in it too. Goes on many types of pasta, or with meat dishes: pollo al scarpariello.
