Calabrian pasta sauce

'From the Sila', alla silana Calabria's forested inland plateau can be used for many different recipes from there, such as meat stews, but it usually means a pasta sauce with Calabrian sausage or guanciale, tomato, onions, cheese, maybe peperoncini and mushrooms.
