zingara

'gypsy' style sauce or garnish

Alla zingara traditionally refers to a sauce for poultry or meat involving sliced greens or vegetables, mushrooms, ham, tongue, truffles in a tomato sauce. You'll also find pasta alla zingara, usually involving peas and mushrooms, or maybe not. No two recipes are the same, but the result should be colourful.
