Salato

cow's milk 'salt' cheese

Salato means 'salted', as well as a rare white cheese from Carnia. This comes in two forms: a classic (duro) pressed cheese immersed in wooden vats filled with brine mixed with cream for three to six months, and a fresh, soft tenero version, soaked in brine for only 20 days.
