intense cow, goat and/or sheep cheese

Made throughout the province of Cuneo but especially in the Upper Tanara valley, these cheese has a rind that gave its name ('shoe sole') in the Piedmontese dialect. It's related to Raschera, only the cheese is smaller and only whole milk is used. It can get quite tangy when aged for a long time.
