botìro (di Primiero di Malga)

butter from mountain meadows

In the days of the Serenissima, the finest butter was known to come in summer from the alpine valley of Primiero, rich and full of the perfumes of the meadow flowers. After being totally lost, the art of making the butter was recently revived in 2007. It is shaped in moulds decorated with wildflowers.

Interestingly, the Venetian word for butter, botìro is similar to the Greek, vutíro.
