Several different kinds of gadget can be called a torchio: a device like a meat-grinder that squeezes out long pasta, or the familiar sort of pasta machine that presses out sheets, or a grooved rolling-pin that cuts a sheet into spaghetti. A dish called al torchio is only saying it's made with fresh, home-made pasta. There's also a specific twisty shape of dry pasta that manufacturers slyly call maccheroni al torchio.

A traditional wine press, an old manual printing press or any sort of press with a corkscrew gear can be called a torchio.
