Scrapings of very fresh, still warm, elasticky Parmigiano when shaping the wheels of cheese were a very popular treat with children back in the day. They've recently made a comeback in restaurants, breaded and fried as antipasto snack. The word means 'fleece' in Italian, as in Golden Fleece.
