tagliatelle, Jewish style

homemade pasta

Unlike other forms of tagliatelle, fogietti are baked in the oven and toasted before boiling, the opposite of a bagel. The pasta is then added to soup or served in a sauce. Made in the ancient Jewish community of Ancona.
