Italians like it on pasta, or in it (the green-coloured tagliatelle, spaghetti, etc. are made with spinach), or inside it, as a common filling for tortellini or capelletti. Plain spinach, steamed, boiled or sautéed with oil and lemon is a popular side dish.

With ricotta, it's a filling for pies and pastries.
