Formaggio Grigio

'grey cheese'

Also known as Graukäse. Named after its thick greyish mold that covers the rind, this strong low fat rennet-free cheese has been made by dairy farmer in Tyrolean meadows for centuries after the fat of the milking was skimmed away for making butter. On the Italian side of the border, you'll find it in the Valle Aurina.
