Bro’ brusa

'burnt broth'

Bro’ brusà ('burnt broth' in Trentino dialect) is not something you'll see in many restaurants. Flour and butter are mixed and fried until it turns dark brown in a roux, before water is slower added, along with salt and pepper. It's reputedly good for stomach aches. Most people add other ingredients— pancetta, grated cheese, croutons, beans etc.
