Nostrano Valtrompia

hard cheese aged in mines

Hard and grainy, and good for grating or the cheese board, DOP Nostrano Valtrompia has made in the valley north of Brescia since the Renaissance and is now aged in several abandoned mines in the region. Becomes more pungent with age.
