pancakes from Lake Como

A simple snack beloved of local bambini made with flour, water, milk and eggs, fried and topped with sugar at its most basic, although people often add raisins, apples, lemon zest and other fruit.

A cucina povera version known as paradell or paradello traditionally has no milk, and sometimes no eggs.

Also known as cutiscia or brusada, or laciada on the Lecco leg of Lake Como.
