Rich pecorino, Pecoricco is made by Nebrolat in Sicily’s Monti Nebrodi, a soft, ewe’s milk cheese studded with stuffed green olives, rocket (arugula) and chilis.
Harder to find is Belicino from the Belice Valley in Sicily, is a more mature pecorino, filled with green table olives Oliva da Tavola Nocellara del Belice.
