Crapiata, typical dish from Matera

In spite of its less than lovely sounding name in English, this is a rich and healthy soup from the Matera region, made with spelt, beans, broad beans, potatoes and peas. Still served in many restaurants in the area, and good with a sprinkling of Parmesan.
