Soft unpasteurized goat’s milk cheese from Basilicata’s villages in the confines of Parco Nazionale del Pollino (famous for its beautiful Bosnian pines).
Made between April and June, the Padraccio del Pollino, as it’s often called, has a mild creamy taste and is often spread on bread with pickles.
