Also spelled pettule, these deep fried fritters made with yeast, flour, salt, sugar and water originated in Albania anf are especially popular with an aperitivo in the Salento. They can be plain, or mixed with chopped cauliflower, or with capers, chopped black olives, tomatoes and onions. There are sweet versions as well.
