A light brioche shell filled with lemon-flavoured vanilla custard and tangy amarena cherries from Aversa that was a favourite of Pope John Paul II. Not surprisingly, it was a Polish nun who moved to the town in 1920 and would make this Polish dessert for the other sisters in the convent.
Not long after, a local baker tried and adapted the recipe to local tastes and ingredients, adding a crispy sugar topping and polacca aversana was born.
