Milanese style zabaglione

rusumada

Rusumada (also known as resumada, russumada, rosümada or rüsümada), is made with very fresh eggs, sugar and red wine (or Marsala). Four eggs, and often with four more yolks to give it extra punch as a restorative are whipped together then added to the sugar and red wine.

Sports people use it as an energy drink. Although it’s usually served at room temperature, in Milan it’s often served cold on hot and humid summer days.
