A sandwich from around Vieste, available in most pizzerias, a paposcia is made with a crispy slow rise sour dough focaccia esembling a ciabatta, baked in a wood burning oven until crispy, and filled with anything— turnip greens, cheese and sausage or parmesan flakes, rocket, raw and tomatoes are among the most popular choices.
