'test the salt'

Tastasal is the fresh ground stuffing for a salame of no defined recipe. In the Veneto, especially around Verona, they like to keep some aside and cook it with cheese and garlic in a creamy risotto.

Originally, people would make this dish to test whether the stuffing was ready to go into the salame, hence the name.
