The French love asperagus, both the green and white kind, especially in the spring when it’s one of the first homegrown vegetables to appear, along with spinach. In winter you can also find green asperagus imported from South America. White asperagus (asperges blanches) in jars is always available.
In spring you can also find wild asperagus (asperges sauvages or asperges sylvestres) if you know where to look, or at a specialist greengrocers.
