Aubergines are nearly always available—the big dark purple kind as well as, increasingly, the smaller striped version, white egg-shaped ones and others.

Caviar d’aubergine is a popular spread or dip, made with roasted aubergines mashed up with garlic, olive oil, thyme and some lemon to help it keep its colour. You can find it in small jars.
