céleri rave



A rather ugly but very popular vegetable in France, céleri rave (celeriac, celery root, knob celery, and turnip-rooted celery) sometimes appears in a julienne de légumes, but most often stars in a rémoulade salad—the tangy French version of cole slaw. There are many opinions on how to do it just right; here’s a discussion and good recipe.
